I have used pork sausages for this recipe, but any kind of sausage works. This curry would taste just as good with chicken sausages too.
This recipe is really versatile and can be had with so many different things. I had this curry with steamed rice, but it tastes really good with roti, naans and parathas too.
This curry stays good in the refrigerator for up to 4 days. Make sure to store it in a clean and dry airtight container. If you notice that the curry has become too thick, simply add a 1-2 tablespoons of water to adjust the consistency, reheat on the stove or in the microwave and it's ready to serve.
Top Tips To Make The Best Sausage and Potato Curry
- Even though I have only added potatoes, you can add whatever veggies you like and have available. Some veggies that will taste great in this curry are carrots, bell peppers, peas, mushrooms, and cauliflower.
- I haven't used any store-bought curry powder since most Indian kitchens already have powdered spices ready. However, you can use a curry powder if you like.
- I would highly recommend not skipping garam masala for this recipe. I have used my homemade garam masala, but you can use a store-bought one as well.
- If you want a creamier curry, then feel free to add some cream or coconut cream to it.

One Pot Curried Sausages and Potatoes
Ingredients
- 2 tablespoons Oil
- 6 - 8 Sausages
- 1 Star Anise
- 1 teaspoon Fennel Seeds
- 2 Onions sliced
- 1 Tomato diced
- 1 cup Tomato Puree
- 1 Potato large , peeled and diced
- 1 teaspoon Chili Powder or Paprika
- 1 teaspoon Coriander Powder
- ยฝ teaspoon Garam Masala
- Salt to taste
- Coriander Chopped for topping
Instructions
- Heat oil in a pot and add sausages and ยผ cup water. Braise the sausages till the water evaporates and the sausages are light brown on all sides. Remove on a plate and set aside.
- In the same pot, add star anise and fennel seeds. Saute for a minute and add the onions. Cook the onions for 3-4 minutes and add tomatoes, tomato puree, chili powder, coriander powder, garam masala and salt. Cook this mixture for a few minutes so that the spices are cooked a bit.
- Add potatoes, 1 cup water and sausages to the pot. Bring this to a boil and simmer and cook for 10-15 minutes till the potatoes are cooked through. Switch off the flame and top with chopped coriander.
- Serve this One Pot Curried Sausages and Potatoes with steamed rice or chapatis.

Hey Sam! This recipe is already quite spicy, so I would recommend using any sausage with less heat.

How do you heat oil, then add sausages and then add water to it?.. I'm confused at the first step..

Hey Maya, its just as the instructions say. Add oil in a pot or pan and add sausages and water. As the water evaporates the sausages cook and caramelise which gives them a nice brown sear on all sides. I hope that makes it clearer.
